A complex, sparkling cider made from a blend of 75% Dabinett and 25% Colloggett Pippin. This is the same blend as our Gwella 2023, but was wild fermented in fresh Pinot Noir barrels for 11 months.
We get notes of subtle red berries and honeydew melon, with gentle yet gripping tannins to finish. This cider will pair beautifully with charcuterie, cheese; blue, sheep’s or burrata, and lamb or mushroom-based dishes.
