Spyrys 2023

Sparkling, full juice wild fermented dry cider, no added sulphites, 6.3% abv 

A sparkling cider for the table, made from a blend of Colloggett Pippin, Tremletts Bitter, Dabinett and Browns. Fermented in stainless steel where we allowed a beautiful pellicle to form. 

A full bodied, juicy cider. We get notes of pineapple and preserved lemons, with a fruity sherbet zing. One for the Lambic beer or Riesling lovers.

Designed to be enjoyed with food. Perfect alongside rich, fatty, and salty dishes. Think cured meats & cheese, antipasti, miso roasted vegetables or roasted meat.  

Diwettha 2023

Cornish, full juice, wild fermented dry sparkling cider, barrel aged, 6.5% abv

A delicious and vibrant cider made from a blend of Yarlington Mill, Norwood, Browns, and Ellis Bitter, handpicked from orchards we manage regeneratively on the South Coast of Cornwall.  

Wild fermented and aged on lees for 11 months in oak barrels, before spending a further 13 months (before release) ageing in bottle.

We get notes of tropical fruits and fresh citrus, followed by subtle spice and a gentle hint of salinity. Designed to be enjoyed at the table, perfect with anything salty and savoury. Think roasted meats, rich mushroom dishes, cheese, or spicy dishes.
